Why Litti Chokha is famous dish of Bihar & how to make it?

Bihar is an eastern state of India and Litti Chokha Litti Chokha is the signature dish of Bihar. It is a very prestigious land as the Mauryan Empire originated from Magadh. Litti Chokha was basically a common food item of the people of Magadh. What is Litti Chokha?

Litti Chokha is a famous dish of Bihar and very popular. Litti is a dough ball that is stuffed with Sattu and roasted until brown and served with pure desi ghee to enhance its taste, while Chokha is made with potatoes, tomatoes and a lot of spices. The best thing about Chokha is that it’s not cooked like a regular sabzi, rather it is a roasted vegetable mix. Some people like the pungent flavour and roasted Litti with mustard oil. Litti is made of whole wheat flour, stuffed with Sattu and spices. It backed over coal without much need for water and utensils.

Interesting History about Litti Chokha:

It is said that, in the meantime, Litti and Chokha were eaten by the farmers in Bihar before becoming a popular dish. Litti has some cooling properties that keep farmers active throughout the day in summers.  Is is also said that, this famous dish was first cooked in the Megadh Kingdom. This dish was very popular among the times of Rani Lakshmi Bai and Tantia Tope and became an important meal during the war.

What are the ingredients required to make Litti Chokha?

Ingredients for Litti dough.

  1. Aata: 250 g
  2. Besan: 100 g
  3. Ajwain: 5 g
  4.  Salt: according to taste.
  5. Some water.

Ingredients for Litti filling.

  1. Sattu: 250 g 
  2. Garlic Clove: 1, very finely chopped.
  3. Ginger: 50g, finely chopped.
  4. Green Chillies: 5, finely chopped.
  5. Dhaniya: half a bunch.
  6. Thyme: half tablespoon.
  7. Mango or red chilli pickle: according to taste.

Ingredients for Chokha:

  1. Vegetables: Brinjal, Tomato, Potato, onion, green chillies
  2. Amchoor powder, Salt: according to taste and can add extra spice

How to Make Litti Chokha Recipe?

  1. Sieve the atta in a bowl and add salt, ajwain and oil to it and knead the dough with water simply.
  2. Cover it with a wet cloth. In a bowl, add Sattu and all the spices with Ginger, coriander, some lemon juice and green chillies mix well.
  3. Add some oil and water to it if it seems a bit dry. It must appear crumbly in texture.
  4. Now, take medium size dough and start rolling them like chapatis. Do not apply any kind of extra flour to it.
  5. Add some feeling to it and then cover it from all the sides keeping it circular in shape.
  6. Now, Litti is ready for baking, bake them for 40 to 45 minutes.
  7. The other hand boil and peel the potatoes.
  8. Roast the brinjal and tomatoes until they become evenly soft from all sides, peel the brinjal carefully.
  9. Take the boiled potatoes, brinjal, garlic, tomatoes and mash them together in a bowl.
  10. Finally, add onion, coriander leaves, ginger, green chillies and some mustard oil to it. Mix well.
  11. Litti Chokha is ready to serve.

Serving Ideas for Litti Chokha:

Place Chokha in a bowl, and Dip hot Litti into it. Serve hot along with coriander chutney if available. Litti can be broken from the centre and ghee should be poured right from the top. Consume it this way and get drowned in its amazing Aroma and flavours!
